Fricassee: Brazilian creamy corn vegan chicken

Fricassee: Brazilian creamy corn vegan chicken


  • 1 cup of sweet corn
  • 1 cup of vegan cream
  • 2 tablespoons of vegan cream cheese (recipe below)
  • 1 tablespoon of nutritional yeast (recipe below)
  • 2 cups of shredded vegan chicken (recipe below)
  • 1 cup of champignons
  • 1 tablespoon of olive oil
  • 1 onion, minced
  • 2 tomatoes, minced
  • 2 cloves of garlic, minced or 1 teaspoon of garlic powder
  • 1 teaspoon nutritional yeast
  • 1/4 teaspoon of oregano
  • Salt to taste
  • Pepper to taste
  • 1 tablespoon of tomato puree
  • 1 package (2 cups) of fried potato sticks


  1. Blend the ingredients for the cream of corn until they become creamy. Reserve.
  2. Add the oil to a pot, when hot, add the tomatoes, onions and the minced garlic if you’re using it. Let it cook in low heat for 10 minutes. Add a splash of water if it gets dry. Add the spices, stir, add the vegan chicken, the champignons, and the tomato puree, and let it cook for 5 minutes in medium-low heat, then, add the cream of corn and let it cook for 5 minutes more.
  3. Turn off the heat, add the fricassee to a serving plate, cover with the potato sticks and serve it with a side of white rice!
