EMERGENCY BREAD. Fast, easy and delicious oil free rye bread!

1 hour from start to finish.

This bread was not only an emergency but an accident - with a pleasant ending I must add. I have started making bread and suddenly I realized that I was out of yeast! Oh, snap! But since I have had all the ingredients already mixed up I have decided to take the chance and add baking powder instead. And it worked wonders! They say that the best foods come from culinary accidents... Well, this is absolutely right!

Enough chitchat! Here is the recipe!

EMERGENCY BREAD. Fast, easy and delicious oil free rye bread!

• 3 cups of rye flour (or whole wheat flour)
• 1/2 cup of oatmeal
• 3 tablespoons of muscovado sugar or brown sugar
• 2 tablespoons of ground flaxseed
• 1 1/2 teaspoon salt
• 1 1/2 tablespoon of baking powder
• 2 teaspoons of baking soda
• 1 tablespoon of apple cider vinegar
• 3 tablespoons of coconut oil (optional)
• Water
• Seeds and oatmeal for sprinkling on top

Instructions

    Preheat the oven for 190℃ (400℉).

    Mix all the ingredients together. Be careful not to let the salt, apple cider vinegar, and baking soda to be in direct contact with each other, it might compromise the bread raising.
  • 3.
    Put the bread in the ovens middle rack for 50 minutes to 1 hour. Remove from the oven and wait at least 30 minutes before serving it.
