FOR THE BATTER:
2 cups of all-purpose flour
2 1/2 cups unsweetened soy milk
1 tablespoon of baking powder
1 tablespoon of lemon or lime
2 tablespoons of nutritional yeast
2tablespoons of ground flaxseeds
1/4 cup of oil
1 teaspoon of salt
FOR THE FILLING:
1/3 cup sweet corn
1/3 cup olives
1/4 cup chopped onions
1 chopped tomato without seeds
6 to 8 vegan hot dog sausages, chopped
Chopped parsley to taste
1/2 cup (or more) of tomato sauce
A pinch of salt if needed
In a bowl, mix all the ingredients for the filling, reserve
Preheat the oven to 200℃.
Make the batter by mixing all the ingredients for the batter, mix very well until it's lump-free and smooth. Grease the baking tray and flour it, add the batter then add the filling on top by distributing it evenly all over the top. Put it in the preheated oven for 35 to 40 minutes.
The time in the oven might increse if youre using whole wheat flour.
