Thai seitan strawberry salad


  • 1 bunch of fresh mint
  • 1 bunch of fresh basil
  • 1 bunch of cilantro
  • 1/2 cup of sliced strawberries
  • 1/2 cup of cherry tomatoes
  • 1/2 cup of sliced cucumbers
  • 1/2 cup of sliced onions
  • 1/3 cup of mild red chili
  • 1 teaspoon of coconut sugar
  • 1 garlic clove, crushed
  • 1 teaspoon of grated ginger
  • a pinch of black pepper
  • 1 tablespoon of sweet chili sauce
  • 1 tablespoon of sesame oil
  • 14 Oz (400g) of seitan sliced into half-inch thickness
  • 1 tablespoon of vegetable oil
  • the juice of two lemons
  • a pinch of salt


  1. Make the sauce:
  2. add the garlic, ginger, sesame oil, black pepper, the sugar, the sweet chili sauce, the lemon juice, and stir until combined. Add three or four tablespoons to the seitan. Reserve the remainder of the marinade for the salad.
  3. add the vegetables with the chopped herbs to a bowl, reserve.
  4. add the vegetable oil to a skillet, add the seitan and brown it on both sides. Remove from the skillet and slice the seitan.
  5. Add the seitan to the salad, mix with the vegetables and add the salad dressing.
