This easy veggie Wellington is perfect for the Holidays dinners, it is so meaty and rich even nonvegans are going to fight over it. You can prepare the vegetable mixture ahead and make your life easier during this busy time of the year! However, if you are not making it for Christmas or Thanksgiving, you can skip the dried fruits and add extra mushrooms!

Vegan Wellington – puff pastry roast

Ingredients

  • 2 sheets of vegan puff pastry
  • 1 1/2 cup mirepoix (celery, onions, carrots)
  • 3 cloves of garlic minced
  • 8 oz oyster mushrooms, chopped
  • 1 nob of vegan butter,
  • drizzle of olive oil
  • 1/2 cup mixed nuts of your preference
  • 1/2 cup dried cranberries
  • 1/2 cup of minced fresh herbs (sage, parsley, rosemary)
  • 3 tablespoons flaxseed soaked in 6 tablespoons water
  • 5 or 6 dried figs, halved
  • 1/2 cup breadcrumbs
  • 1/3 cup flour
  • salt and pepper, to taste
  • pinch of nutmeg
  • 1/2 cup squash cubed and roasted in 1 teaspoon of cinnamon, a pinch of pepper, salt and drizzle of olive oil
  • 1 cup of cooked quinoa
  • orange zests (approx. 1 tablespoon)
  • 1/4 cup red wine
  • 1 tablespoon vegan mayo, or unsweetened plant based milk or vegan butter for brushing on top of puff pastry

Instructions

  1. remove the puff pastry from the freezer at least 3 hours before you start cooking, it should be at room temperature
  2. preheat the oven at 425Fcut the squash in small cubes, season with
  3. cinnamon, salt, and olive oil roast it for 30 minutes at 300F
  4. prepare the flax egg by adding the flax seed and the water, reserve
  5. finely chop the herbs and put them together in a bowl, reserve
  6. on medium-low heat, in a saucepan, melt the vegan butter and add the olive oil, as soon as it melts, add the mirepoix, add the salt, stir until golden brown, it will take about 20 minutes
  7. add the mushrooms, salt, leeks, garlic, stir for 1 more minute
  8. add the wine and stir to remove the gold bits from the bottom of the pan, then add the fresh herbs, stir for 40 seconds, add pepper and nutmeg and the orange zest
  9. set the mixture aside so it cools down properly
  10. on a separate bowl, add the roasted squash, the quinoa, the dried figs, the dried cranberries, the mixed nuts, the mushroom mixture, the flax egg, the flour, and breadcrumbs and mix until all combined. Reserve
  11. flour a clean dry surface with all-purpose flour, roll the puff pastry, flour it, roll in on the rolling pin and place into a baking loaf pan, grease it and add a sheet of parchment paper leaving extra sheets on the sides so you can lift it when ready
  12. cover the Wellington with the other puff pastry sheet, tuck all sides in and score the center so the steam comes out while baking, brush it with vegan mayo, or unsweetened plant-based milk or vegan butter. Bake in the oven at 425F for 35 to 40 minutes.
  13. wait for at least 10 minutes before removing from the loaf pan, serve it wild berries jam or gravy.
